New flavors at Trail Town Brewing

For Jake Brummett, the owner and force behind Trail Town Brewery, every day is an adventure in flavor and community.
“We’ve been open just over three years,” he told the News in a recent interview. “And our kitchen has been up and running for three weeks now.”
Though the local brewery on the corner of Dayton and Corry streets previously hosted Miguel’s Tacos in its kitchen space, that business returned to its original food truck location on Xenia Avenue in April, and Trail Town made the leap to pursue its own kitchen concept in May, under the leadership of chefs Anthony Smith and John Spiller.
According to Brummett, the new menu represents Trail Town’s eclectic vibe.
“We’ve got smoked chicken wings with multiple flavors, fresh-cut fries, and poutine—a Canadian treat with gravy, braised beef, and cheese curds,” Brummett said. “Our smoked Brussels sprouts are a hit, too, and we also serve chips with queso and chorizo.”
Trail Town’s kitchen also offers a variety of burgers, including a vegetarian black bean and corn burger and a classic chicken sandwich, and soon, pulled pork BBQ sandwiches, nachos and tacos.
The culinary delights don’t end there, as Brummett’s pride in his brews is evident.
“Our beer selection is always evolving. We keep four or five of our own beers on tap, plus guest taps, and even have sangria and margaritas,” he says. “People love our ‘Welcome Home,’ an American IPA, and ‘Blue Blaze,’ a blueberry tart.”
The name “Trail Town Brewery” is no accident, as the business is located near the Little Miami Scenic Trail, and Yellow Springs was designated a Buckeye Trail Town in 2017. Brummett said he “liked the sound” of the name and wanted to capture its spirit.
Since its inception, Brummet added, Trail Town has seen a warm welcome from the community.
“We’ve built a solid base of regulars, especially now with the kitchen open,” he said. “Even though we opened right at the end of COVID, we’ve seen growth. We’ve rejuvenated the live music scene here, too.”
Live music is a cornerstone of Trail Town’s charm, with Wednesday nights featuring rotating regulars and Thursday nights earmarked for local duo Sharon Lane and Danny Sauers.
“They bring a different special guest each time, helping new artists get noticed,” Brummett said. “Sharon’s storytelling paired with Danny’s sax and local guitar talent creates a unique mix.”
Brummett added that sustainability is also on the brewery’s mind, with all of its used brewing grains being donated to a local farmer as pig feed.
“We’re planning to improve our recycling too, and our to-go orders come in compostable boxes,” he said. “Come check us out soon — you won’t be disappointed!”
