Local woman launches superfood product

Local resident Wendy Copper and her business partner, Doug Siegel of Bloomington, Ind., have launched a new business, Vigilant Eats, with an aim to produce nutritional new food products. Their first product, Organic Superfood Oat-based Cereal, is now available at the Emporium.
The cereal contains goji berries from Tibet, which are considered powerful antioxidents, along with cacao nibs from South America, which are believed to be mood elevators. Other ingredients are organic gluten-free rolled oats, gluten-free organic oat flour, organic coconut palm sugar, organic maple syrup powder, organic hemp flour, organic yacon (a tuberous root from South America, used as a sweetener) and organic cinnamon.
The cereal took about a year and a half to develop, Copper said in a recent interview, as the partners experimented with the taste and worked to locate sources of nutritonal, organic and non-gluten ingredients. Feedback on the product has been so positive that they produced an initial run of 20,000 containers of the cereal, Copper said.
